Laura's Gingerbread

 



In celebration of the birthday of one of my all time favorite authors, Laura Ingalls Wilder, 
here is the original recipe for her famous gingerbread!  For many years, Laura made this
special dessert to celebrate her own and husband Almanzo's birthdays.
(He was born on February 13th.)   The recipe below comes from a letter
written by Laura to a friend in 1947.

1 cup of sugar

1 cup molasses

3 cups flour

1/2 cup shortening

2 eggs well beaten

1/2 tsp. salt

1 tsp. ginger

1 tsp. cinnamon

1 tsp. allspice

1 tsp. cloves

2 tsps. baking soda

1 cup boiling water



Preheat oven to 350.  Cream together sugar and shortening. Add molasses and mix.
Put baking soda in a one-cup glass liquid measuring cup. Hold cup over mixing bowl and
 add one cup boiling water.  Let foam run over into bowl until cup is full of water. Mix.

Sift spices and salt with flour into above mixture and mix thoroughly. Add two well-beaten eggs.
Fold them in lightly but well.  Pour into greased 9 x 13 inch pan and bake at 350 degrees for
30 minutes or until toothpick comes out clean.
